Oregano Lemon Chicken with Potatoes

I got some wonderful late Christmas presents from a lovely trio of ladies (my Aunt Brenda and the infamous twins):


A GREAT cookbook, from which (SPOILER ALERT) tonight's recipe originated, and a beautiful journal to jot down all my thoughts, culinary and otherwise.

Not two minutes after I got the cookbook (and let it circulate to be signed by my various loved ones) I had thumbed my way through the table of contents and found something to whip up for dinner.  Now most of what's inside it is pretty intricate and uses ingredients that I don't often have in the kitchen, so when I found a recipe for lemon chicken and potatoes, I jumped on it.  I'm pretty familiar with this timeless classic, though cooking the potatoes in the pan with the chicken breasts and aaaaall that juice and seasoning was borderline perfection.  Granted, this recipe needs a little extra time to be cooked properly (2 1/2 hours for a whole 3 lb. chicken, which the original calls for), but it's well worth it.

Look how pretty it turned out!  Plus, this is probably the nicest food picture I've taken so far.

However, I still feel like it's... missing something, photo-wise.  Still trying to improve my visual documentation tactics.
